Experimenting with new dishes and flavors? Sandra Waterschoot-Koopmans (33) never liked it. Until she came into contact with cuisines other than Dutch. She started the blog Leukrecepten.nl and now wants to inspire others to become more confident in the kitchen

Breakfast 

“During the week I almost always have the same breakfast:with oatmeal – briefly cooked in almond milk – and banana, kiwi or peach. I drink a glass of orange juice and a cup of coffee or green tea. On weekends we have an extensive breakfast. We often make a croque madame or French toast.”

Lunch

“One of my favorite lunch dishes is a whole wheat cracker with avocado, goat cheese and a pinch of chili. Or a sandwich with pesto, tomato and mozzarella. I also regularly make a pan of fresh soup that I can use for lunch for a few days. Sometimes I reach for an unhealthier choice, such as a (vegetarian) sausage roll or sausage roll.”

Dinner

“I almost never cook the same thing, because I often create new recipes for my blog. When I'm short on time, I make a falafel sandwich. Otherwise I like to go for a casserole or quiche. On average, once a week is a leftover day. Then I make a pasta dish or stir-fry dish with ingredients that have to be used.”

In between

“I drink tea throughout the day and regularly grab a cookie or piece of chocolate in between. Furthermore, I often bake a cake or pie that must of course be tasted, but I often also hand it out to visitors. In the evening we try to keep snacking in check and eat fruit, a cracker or corn wafer. I eat chips once a week.”
