This is the food diary of Anki Willemsen from  Lazyfitgirl

Anki Willemsen, nutrition coach and owner of Lazyfitgirl, talks extensively about her lifestyle in the March issue of Santé. We take a look at her food diary.

“With me it was always 'all or nothing' and that's why I kept yo-yoing. I let go of eating schedules and started eating intuitively:just when I was hungry and without imposing anything on myself. It was a process of small steps in which I learned to enjoy food.” You can read the full interview with Anki in Santé 4.

Breakfast

“I usually have breakfast around ten o'clock, when I get really hungry. Then I always eat nutritious food, such as low-fat cottage cheese with muesli, nuts and fresh fruit. My favorite breakfast is oatmeal with vanilla extract, banana and cocoa nibs, topped with peanut butter and cocoa powder.”

Lunch

“Almost always wholemeal or sourdough bread with hummus, avocado, aubergine spread and tomato. I also like to put a whole wheat wrap with 30+ cheese and grilled vegetables on the grill. I eat enough vegetables for lunch anyway.”

Dinner

“We eat normal dishes in which we switch food with ingredients. For example, I use oat cooking cream instead of crème frache. We also like casseroles or soup with a beet burger bun. Once a week I put a nutritious pizza with my sons. I get all my inspiration from my own Lazyfitgirl community.”

In between

“Ready snacks make me tired and I get cravings for more sugar. That's why I eat the same nutritious products in between as in my main meals, such as a whole-wheat cracker with vegetable spread. I regularly eat chocolate or cookies in the evening, those are conscious moments of enjoyment.”
