In Santé's April issue you will find everything about 'the new drink'. Below is a delicious recipe for the Japanese zen patties.
Ingredients:
– 10 g basil leaves
– 100 g tofu, sliced 1 cm thick
– 5 radishes, sliced
– 200 g flour
– 50 g butter, cold and cubed
– 1 tsp baking powder
– 1 tsp black sesame seeds
– 1 tsp sea salt flakes
Preparation:
Heat the oven to 180 degrees C and grease a baking tray. Place the flour, butter, baking powder and ½ teaspoon sea salt flakes in a blender and blend for 1 min. The butter should be completely incorporated into the flour.
Add 4 tbsp water and mix until dough begins to form. Add more water if necessary and mix until a soft dough is formed. Roll out the dough on a floured surface and roll out into as thin a layer as possible. Poke holes in it with a fork. Cut circles out of the dough with a metal mold and place on the baking tray.
Bake the pastry doughs for 15 minutes until they are dry and crispy and place them on a rack until they have cooled completely. Cover half of the rounds with basil, top with a slice of tofu, followed by a few slices of radish. Sprinkle over the black sesame seeds, cover with a biscuit and make another layer. Finish with a biscuit and basil leaf.
