As soon as the sun shines and the temperature approaches 25 degrees, I often don't feel like cooking anymore. I prefer to eat a couscous salad with feta or something like that, but unfortunately the kids don't always agree 🙂 . Although… if there is couscous in it, the salad is always better than without couscous.

One of my favorite salads is this couscous salad with feta. Not only very tasty, but also nutritious and ideal for using up leftovers! For example, if you have some leftover cauliflower or broccoli, you can pre-cook it and then add it chopped. Delicious!

What do you need for a couscous salad with feta for about 4 people?

Ingredients:

  • 300 gr couscous
  • Bouillon cube
  • 1 or 2 avocados (diced)
  • A bowl of cherry tomatoes (quartered) or a bunch of radishes
  • Cucumber (diced)
  • Sachet of arugula (about 100 gr)
  • Fêta, amount to taste
  • Smoked chicken (sliced ​​small)
  • Olive oil, 2 tablespoons
  • Lemon juice, 1 tablespoon

Tip:Try using pomegranate pieces as above for an extra fresh effect. And don't forget to save the leftovers for lunch the next day or as one of the favorite picnic recipes to use.

How do you prepare couscous salad with feta?

Prepare the couscous according to the instructions for use. Instead of salt, add a stock cube to the cooking liquid, that is also very tasty. Let the couscous cool. Chop everything else and stir to combine. Mix the oil with the lemon juice and mix it with the salad. Ready!

Your couscous salad with feta is excellent for variation. For example, think of the following ingredients that really give a different taste sensation:

  • Can of apricots or pineapple
  • Raisins/cut dates
  • Green peas/ beans
  • Chickpeas
  • Spring onions
  • A lot of fresh herbs such as coriander, parsley, chives – instead of smoked chicken you can also opt for:shrimp, feta, fried or smoked tofu, diced ham, etc.

Just take a look at what you still have in the (refrigerator) cabinet and vary! This couscous salad with feta is also delicious as an addition to the bbq. Then don't add any extra meat, but add a nice chicken skewer, for example.
